These are Mrs Fred's cheese scones.
225 g self raising flower
1/4 teaspoon English mustard powder
1/4 teaspoon salt
1 teaspoon baking powder
28 g butter
170 g Cheddar, Comte or hard cheese of your choice plus more for topping
1 egg
A little milk
Sieve dry ingredients then rub in the butter with your fingers till it resembles breadcrumbs.
Grate the cheese and mix in. Add the egg and mix to a dough *(add a little milk if it's too dry)
Roll out to 2.5 cm thick and cut into rounds. Brush with a little milk and grate some cheese over the top.
Put in preheated oven 170c for around 20 minutes.
Eat hot or cold as they are or split in half with some butter.
You can substitute the mustard with cayenne or pepper if you prefer.
